Freezing Basil on Cookie Sheet

Freezing basil on a cookie sheet for long term storage

Ingredients
  

  • 4 cups Basil
  • 1/4 cup Olive Oil

Equipment

  • 1 food processor or immersion blender
  • 1 measuring cup
  • 1 tablespoon or 1/4cup

Method
 

  1. Pick the best basil from the Garden
  2. Prepare baking sheet by spreading out parchment paper
  3. Rinse with water and Dry well. Drying is important.
  4. Place basil leaves in processor or back into bowl for blending
  5. Drizzle oil over basil and blend, work quickly the longer it is exposed to air the darker it will get.
  6. Spread thinly on prepared tray and parchment paper, I go for about 1/8-1/4 thick
  7. Place in freezer, after an hour remove and score to about 1" squares
  8. Freeze until solid about 4 hours
  9. Remove from freezer, working quickly break of scored chunks and put in freezer proof bag or container of your choice.
  10. When using in your favorite recipe, remove from container and put right into recipe.
